Henan Stewed Noodles
This is a local food with noodles, meat, vegetables, and soup all in one. With a long history, it is one of the most famous noodles in China along with Beijing's noodles with fried soy sauce and minced meat, Shanxi's sliced noodles, Hubei's hot dry noodles with sesame sauce, Sichuan's noodles with chili sauce, and Lanzhou's hand-pulled beef noodles.
Henan stewed noodles are made of high-protein flour, cooked with various trimmings such as well-boiled soup, shredded kelp, slices of dried bean curd, starch noodles, and quail eggs, and served with side dishes like coriander, chili oil, and sweetened garlic. Given the different trimmings, there are mutton noodles, beef noodles, and assorted noodles. Their fragrance comes from the soup, which is cooked with mutton and lamb leg bones, and the addition of Chinese medicinal herbs such as dangshen (codonopsis root), danggui (Chinese angelica), huangqi (milkvetch root), baizhi (dehurian angelica root), and gouqi (wolfberry) helps remove the raw smell of mutton and neutralizes its heat, resulting in a highly tonic dish.
Henan stewed noodles are a typical dish in the Central Plains popular for being tasty and fair priced. For the locals, it is more than just a dish: It represents their love for their hometown. The noodles were served at the banquet for the 14th meeting of the Council of Heads of Government (Prime Ministers) of the Shanghai Cooperation Organization held in Zhengzhou in 2015.
河南燴面
河南燴面是河南省的一道特色面食,有著悠久的歷史,是一種葷、素、湯、菜、飯兼而有之的傳統(tǒng)風(fēng)味小吃,與北京炸醬面、山西刀削面、湖北熱干面、四川擔(dān)擔(dān)面、蘭州牛肉面并稱中國著名面食,享有盛譽。
河南燴面以優(yōu)質(zhì)高筋面粉為原料,輔以高湯及海帶絲、千張絲、粉條、鵪鶉蛋等多種配菜,上桌時再外帶香菜、辣椒油、糖蒜等小碟。按照配料的不同,可分為:羊肉燴面、牛肉燴面、三鮮燴面、五鮮燴面等。燴面之香在于湯,湯是由羊肉和羊腿骨熬成的,加入黨參、當(dāng)歸、黃芪、白芷、枸杞等中藥,既去了羊肉的膻氣,又消減了羊肉的火氣,是上等滋補佳品。
河南燴面面香肉爛,味道濃郁,經(jīng)濟實惠,已經(jīng)成為中原地區(qū)最典型的風(fēng)味小吃之一。對于河南人來說,燴面不僅是一種美食,還是一種情感。2015年,上海合作組織成員國總理第十四次會議在河南省鄭州市舉行,宴席中的一道特色菜品就是河南燴面。
