Guangzhou's hidden bastions of authentic Ramen

How many authentic Japanese ramen restaurants are in Guangzhou? If you want to taste a bowl of real, traditional Japanese ramen, you don't need to go to a large Japanese restaurant. There are small ramen restaurants and izakayas tucked away in Guangzhou's alleys that have been making authentic, delicious ramen for years.

Shan Ju Izakaya-Only One Ramen

Shan Ju Izakaya sits in Tianhe South amid a residential area where the houses were converted into boutique businesses. Since opening in 2006, there has always been a specialty ramen that San Ju serves ,the big bone ramen. Seaweed, pork, even fiery chili sauce can be added to taste, but the broth and noodles are as authentic as it gets. The shop's owner and main chef, Mr. Qu, has been in love with Japanese cuisine since before he started cooking. How long would you like your noodles to boil?

It's normal to answer back with a blank stare when you are asked "How long would you like your noodles to boil?" In order to cater to the myriad tastes that come through the doors of ramen shops, patrons are asked how long they want the ingredients--mainly the noodles--to cook for so that they can fully enjoy the treats of taste and texture that authentic ramen has to offer. Noodles here need to be boiled for between 30 and 60 seconds. While 40 seconds is the recommended length of time for boiling the noodles, those who prefer their noodles al dente ,firm to the bite,can ask for less cooking time. Fresh brewed fruit wine

An izakaya is not an izakaya without wine. There are more than 60 alcohol selections that fall into one of four categories: sake, shochu, whisky, and the spirit that makes the best pairing with ramen is fruit wine. These homemade wines come in seven flavors: lemon, corn, pineapple, litchi, pomegranate, myrica rubra and apricot. Served chilled, even the ice used to keep these drinks cool are made from mineral water to prevent the ice from melting too fast, which would dilute the wine and hamper its aroma. [Photo:163.com]

Essential dishes to enjoy with wine

These drinking snacks are best enjoyed while out drinking with friends. Takoyaki fried octopus balls and chicken wing "dumplings" are a popular choice. Takoyaki consists of savory pieces of octopus wrapped in a ball of specially prepared Japanese flour dough, then shaped and fried into a perfect ball. Usually served as a half-dozen, they are traditionally topped with teriyaki sauce, seaweed and salmon flakes, along with Japanese mayonnaise. The chicken wing "dumplings" combine the savory flavors of chicken and its stuffing with the slightly sweeter taste of the dumplings' dough wrappings, the combination of which makes for a prime drinking snack.[Photo:163.com]
